Chocolate Peanut Butter Cookies
- 1 cup Peanut Butter
- 6 tablespoons Lodestar® Olive Oil
- 1 cup Sugar
- 1 cup packed Brown Sugar
- 2 Eggs
- 1 tablespoon Vanilla Extract
- 2/3 cup Cocoa Powder
- 1 cup Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
Preheat oven to 350 degrees. Line baking sheet with parchment paper. Cream peanut butter, oil and sugars. Add eggs and vanilla.
Mix well. In a separate bowl combine cocoa, flour, baking soda and salt. Stir together. Add to the cream mixture. Kneading
with back of spoon to moisten the dry ingredients. Dough will be soft and somewhat crumbly. Form the dough into balls and
place onto cookie sheet. Bake 8 to 9 minutes or until cookie is set on sheet.
