Mashed Yukon Gold Potatoes
- 12 Yukon Gold Potatoes, washed & scrubbed
- Kosher Salt for cooking liquid
- 1 bunch Chives
- 1 tablespoon Kosher Salt
- 1/2 tablespoon fresh ground Black Pepper
- 1/4 cup Lodestar® Extra Virgin Olive Oil
- 1/4 cup Sour Cream
Place potatoes into a medium size pot; cover with lots of cold water. Add salt and bring water to a boil.
Reduce the temperature to a simmer and continue cooking for approx. 25 minutes or until the potatoes are tender throughout when poked with skewer.
Remove from stove. Drain away all water from the potatoes, if it helps put them into a colander and let the water drain away, make sure to keep them covered if you are going to do it this way, it’ll keep in the heat.
Place the dry-drained-cooked potatoes into a mixing bowl and using a whisk break the potatoes into small pieces don’t whip or you’ll get wimpy potatoes. Gently fold in Lodestar Olive Oil, sour cream and seasoning (to taste).
Lodestar Farms Culinary Director Jeff Anderson swears this can make a great meal on its own. However, it is a perfect pair for Lodestar’s Pan Roasted Chicken recipe, grilled ahi tuna, sliced flank steak or even braised lamb shank.
